Magical Lembas Bread

This bread is so good, especially on this cleanse, as its legal! Made from almond, chick pea and flax, very nourishing, dense, moist, and keeps you full for some time, hence its name. I am most likely having more servings of it than I'm meant to, but its so good, super easy to make, and I find some love and allowance a key part of shifting ones habits and patterns. So more bread please...

1/2 cup of chick pea flour
1/2 cup of almond flour
1/3 cup of flax meal
3 eggs
1/2 cup water
1/3 cup of olive oil or coconut oil, your preference, i prefer the olive oil because its easier, already melted, coconut oil often solidifies.
1 tablespoon of baking powder
1 teaspoon of sea salt
1 table spoon of vegetable glycerin (sweetener)
2 tablespoons of cinnamon (optional)
1 tablespoon of vanilla (without alcohol, find one that is made with glycerin, if not skip the vanilla part)
1 teaspoon of nutmeg (optional)
3 tablespoons of crumbled coconut butter
seeds - sesame, pumpkin, golden flax, and sunflower seeds to sprinkle on top (or a any assortment of)

This is easy baking. Preheat the oven at 350.
Mix up all the wet ingredients and the dry ingredients in separate bowls. (mix the coconut butter crumbs into the dry ingredients).
Then combine the 2 bowls and let it sit for a minute or so till the batter thickens. Pour in a greased loaf pan, sprinkle some seeds and salt on top, if your like me and like a bit of texture. Then place in the oven and cook for about 25-30 minutes. Just be sure its cooked all the way through. You can use the old fashioned butter knife test, dip it into the center, and make sure no batter comes up with the knife.
A bonus of this batter is it makes GREAT pancakes too. Often when I'm baking it, I will use just a wee bit of the batter for a pancake or 2 for the quick fix while the bread is in the oven. Both ways, as bread or a pancake, it is delicious with ghee, almond butter, or as a side dish with dinner like in the picture above. Of course its delicious all on its own too.
Enjoy! Oh, please do let me know how you like it.

I'm openin' up, move over resistance.

For many years I have been guided, directed, recommended, pointed and moved towards writing. From friends, therapist's, my guides, family, healers, my astrology chart, you name it, all gently saying "Dana why don't you write about it". I kept trying, a journal like I did for my most of teens and early 20's, but that wasn't working. Automatic practice writing the first 15 minutes upon waking, that never seemed to stick beyond 3 days. Then facebook came along, and I got to write in 3 to 5 word statements. Well that felt comfortable, fun, and easy, but also like an easy out. The funny and obvious part of this resistance, is I often recommend writing as an outlet and a channel for healing and creation to my friends, family, clients and patients. But I myself have resisted. I know there is a writer in me, the communicator, that has been hiding behind the spelling errors, friends and boyfriends that were and are all writers, the typos, poor grammar, the funny habit of making up words that sound right to me, but sometimes only me, and of course the fear of embarrassment, and failure, has all kept me from from writing publicly.
So then, just a few words to start this new journey with me here, let me start with Welcome. Thank you for being here with me. I have no idea what this will be but a window into my life, my heart, my head. What an amazing journey that I am on in southern California, and I would love to share more of it with all of you. Over the last 10 plus years I have gathered up quite an interesting and amazing assortment of knowledge, experiences, and personal insights, that I feel (very vulnerably so) ready to share with all of you.
Love you,
Dana
